Feast Mode Veggie Bowl with Spicy Mint Basil Pesto

In the catastrophe that is my recipe journal, you'll find a headline written in haste, panic, and partial breakthrough reading "SAVE THE BASIL PESTO!". Likely due to my copious amounts of cold brew coffee and the lack of care I gave to the basil I buy from Trader Joe's weekly, the headline takes up about half the page and the ingredient list gets more shaky as it nears the end. At any rate, in case you're wondering where genius comes from, one avenue is definitely basil-is-going-bad-panic by way of cold brew overdose.

This. Pesto. RULES. It's more of a sauce because it's not nearly as thick as traditional pesto, but it has all of the components and more. It would be great with some chicken or fish, too. Would love to see how you use it!

This may look like a lot of prep and time, but I had these veggies all week and was the happiest camper around. Cinnamon roasted beets are where it's at, y'all!


Feast Mode Veggie Bowl

Spicy Mint Basil Pesto Sauce

1 1/2 - 2 cups packed basil

5-7 mint leaves

2 T raw pepitas

3-4 cloves garlic

1/2 t crushed red pepper

juice of 1- 1 1/12 lime

3 T avocado oil

2-3 T water

salt & pepper

Roasted Carrots with Honey Mustard Glaze

15-20 tricolor carrots

1 tsp dijon mustard

1 tsp whole grain mustard

1 T olive oil, plus more for drizzling

1 clove garlic

salt & pepper

Cinnamon Roasted Beets

2 large beets, sliced thin

1/2 tsp cinnamon

drizzle avocado oil

pink himalayan sea salt

 

Bowl

1 cup thinly sliced purple cabbage

1/2 avocado

1 baby persian cucumber, halved

1 tsp hemp seeds


Instructions

Preheat oven to 400 degrees. While oven is preheating, mix together honey mustard glaze and using a large mixing bowl, drizzle over carrots. Shake to coat. In a separate bowl, drizzle beets with avocado oil and cinnamon. Place carrots and beets on separate baking sheets, lightly salt the beets, drizzle extra oil on carrots, and cook for 30-35 minutes, checking frequently. You'll want the beets to be just crispy and the carrots to have a nice brown to them.

Once done baking, assemble the bowl with cabbage, avocado, cucumber, hemp, and your glorious roasted veggies and pesto!
