Pumpkin Spiced Lara Bars with Pecans & Walnuts

This is the only kind of date you'll find me with. True story. Once, a guy who was clearly missing my "I'm not interested you're kind of weirding me out" vibe, asked me out to coffee to which I replied:

 "I don't date."

Don't do drugs, kids. Dating is weird. Joking. Am I?

This was my first real attempt at a homemade Lara bar, and between you and me, I won't ever be paying $2/bar for those babes again. The flavor of these bars is stellar, although sweeter than a store bought Lara bar (something to do with the freshness of the date), you get way more for you money, and you can customize your nut preference! As the story goes: Pecan Pie meets Pumpkin Pie, they get married and make beautiful Pumpkin Pecan Spiced Lara bars. 

Get all the energies from these beauts and go cycle or run your arse off. Go ahead. Get moving, get eating, love life and dates. 

 

Pumpkin Pecan Spiced Lara Bars

Place dates in blender/food processor until smooth. Add spices and half nuts and blend. Slowly add remaining nuts until blended smooth, but keeping some pieces of nuts preserved. Need dat crunch! 

Place blended ingredients in a bread pan lined with parchment paper and chill for at least 2 hours. Cut and store in fridge until ready to eat!

*the spices are what you'll need for the base. I'm sure I added a few extra dashes of pumpkin spice and cinnamon.

3/4 c pecans

1/4 c walnuts

1/2 t pumpkin spice

dash (or two) nutmeg

1/2 t cinnamon
