THE COMMON COOK | Greek Yogurt Pops with Figs, Honey, and Thyme
I don't understand people who don't like figs. Look at them. They're the loveliest things that ever happened to June, besides peonies, of course.
In the struggle that is my twenties, I'm still finding ways to narrow the gap between where I am and where I want to be, and to without getting real serious and risk the possibility of an overshare, I'm just going to go ahead and say that a large part of that discovery for me involves food. Rosé. Figs. Thyme. Truffle Gouda. Sparkling Water. Soulful Music. Little notebooks with big ideas. Steinbeck novels. Tiny details of my day that keep my stress controlled and my heart happy.
Instead of trying to curate the next trendy blog subject or recipe, I want to focus on what it is I would want to try. Well, I wanted to try simple greek yogurt pops with some of my favorite ingredients, and it was easy as pie. Or, pops.
INGREDIENTS
- greek yogurt
- honey
- figs, sliced thin
- thyme, chopped (And a few extra sprigs. They look pretty inside the pops!)
- pinch of clove
- pinch of nutmeg
When I say pinch, I mean pinch. You can always add more, but you can't take it away, and both clove and nutmeg are very potent spices. For a popsicle mold with 8 pops total, I used almost a full large container of Fage, a few tablespoons of honey, about 4 sprigs of thyme chopped, and 4-5 figs. Again, you're the cook in your kitchen, not me, so use this as a blueprint! We are "common cooks" after all. ;)
I did about 2 figs in each mold, and froze them overnight. Put the fig slices in the molds first, then mix the yogurt, honey, thyme, cloves, and nutmeg together. Add to molds. To get these little beauties out, run them under some warm water for a few seconds. Now, I'm going to go eat one. Enjoy!
