Cinnamon Cold Brew Ice Cream with Black Cherry Sauce and Churro Chips
There are a lot of things I miss about dairy, and to be honest, ice cream usually isn't one of them, but this is no ordinary ice cream, and these are no ordinary tortilla chips. Cabo Chips asked me to come up with a recipe using their chips, and after tasting their churro flavor, I knew I had to use it. It had me fantasizing all kinds of outrageous things- the most impressive being I was the new "Chopped" champion, churro chip as my wingman, because that is obviously every twenty something's life goal....
Moving on to post fantasy world, real life situations...
The black cherry sauce is a combination of blackberries, cherries, mint, and some crushed red pepper. I added all of them to a sauce pan with a bit of water, and cooked it down until it was purefection. (Pure+perfection=purefection. Duh.) To serve, I topped off the lil'scoops with the sauce, fresh mint, pistachios, and the churro chip. I full on treated my ice cream as salsa and it was glorious. You could crumble the chips as well, but I was feeling a hands on dessert experience. To each his own.
INGREDIENTS
- coffee ice cream
- Cabo Chips Churro Chip flavor
- frozen cherries
- frozen blackberries
- fresh mint, chopped
- crushed red pepper
- salt
- honey
- pistachios
For the sauce, simmer berries, a tablespoon of water, honey, mint, and a few pinches of salt in a sauce pan for about 5-10 minutes, stirring often.
