Mega Green Juice & Imperfect Produce

BEV2.jpg

It's safe to say one has reached adulthood when a box of vegetables showing up at the door on Wednesday morning feels like Christmas. This is me every Wednesday morning (or Tuesday evening if they're feeling real eager) when the magical produce elves come bearing heaps of fruits and veggies to my doorstep. Imperfect Produce, a company committed to finding the "ugly produce a home", is shaking up the produce industry by offering produce boxes delivered to your door for a fraction of the cost found at a standard grocery store. So far most of the produce has had only minor blemishes or imperfections, but everything tastes perfect.

The best part of this whole new adult-Christmas-every-week ordeal, is that I actually get to choose what I want in the box. It comes every week, likely by way of a trendy environmentally safe vehicle featuring copious amounts of bumper stickers, and shows up right outside my door. I really believe in what they are doing to fix the food industry in America (there is way too much for me to write on that, so more on that later...), and am thrilled to give the ugly produce a home!

In this recipe, the collards, apples, limes, and celery are all from Imperfect Produce. I could have included the kale but I had already used it earlier in the week. This juice is very green and packed with vitamins! I added chia seeds to mine and it was the perfect way to start the day.

Mega Green Juice

3-5 stalks celery

4 collard green leaves with stems

3-4 leaves lacinato kale

1 1/2 apples

1/2 lime

1/2 inch of ginger

cinnamon

Make sure all of your produce is washed throughly.

First, squeeze lime into the juice pitcher. (I have this juicer and love it). Start with the leaves and slowly add the rest. Mix in some cinnamon and stir well. If you want, add chia seeds and allow to sit for about 20 minutes.

Get green and glow!
